Abstract: Compulsory microbiological criteria should be applied only in relation to those products or in those points of the food chain, which cannot be applied to other, more efficient ones. As well as in the cases, when the microbiological criteria is expected to increase the protection degree offered to the consumer. Microorganisms that make up the components of the criteria must be generally recognized, for example pathogens or indicator organisms that concern the specific food products and technological processes. The obtained results in terms ofusing the improved method sof Listeria monocytogenes, Salmonella and coagulase-positive Staphylococcus detection in milk and dairy products were steady and authentic, so these figures can be used in evaluating the safety of milk and dairy products. In addition, it should be noted that the techniques are simple, economical in execution and its results give certain quality indicators.
