Abstract: The developed express method of establishing the adulteration of the meat of slaughter animals as a result of treatment with a solution of sodium bicarbonate was based on the use of an alcoholic solution of chromium dark blue with a mass concentration of 0.5 %. The results of the research established that the stability of the color intensity indicators during adulteration of the meat of slaughtered animals by treatment with sodium bicarbonate solution was 99.9 %.
